Title: Island Style Applesauce

Yield: 1 Servings

6 Granny smith apples; cored, sliced
2tbPassion fruit juice; fresh
1/2cMirin
2tbRice vinegar; unseasoned
2tbHoney
1/2 Vanilla beans; split lengthwise
1 Star anise
1 2" piece ginger root

Place all the ingredients in a large saucepan and cook over medium heat for 30 minutes or until the apples are soft and falling apart. Remove the vanilla bean, star anise and ginger. Discard. Transfer the apples and liquid to a food processor or blender and puree. Serve hot or cold.
